探讨破囊壶菌T.roseumMF2脂质的氧化稳定性。实验结果表明,T.roseumMF2脂质由于富含高度不饱和脂肪酸,十分容易氧化;培养基添加L-酪氨酸以及低温培养能在一定程度上提高TroseumMF2脂质的氧化稳定性;脂质中添加抗氧化剂能显著延缓T.roseumMF2脂质的氧化。 |

The oxidative stability of lipid of T. roseum MF2 was studied in this paper. Results showed that the lipid of T. roseum MF2 oxidized easily due to its rich in unsaturated fatty acids. The oxidative stability of lipid of T. roseum MF2 could be enhanced to a certain extent by adding L-tyrosine into the medium and low temperature culture. The addition of antioxi-dants in lipid could delay markedly the oxidation of lipid of T. roseum MF2. |
